Pan Roasted Chipotle Salmon
Quick.
Simple.
Spicy.
[May or may not pair well with that beet and bulgur salad].
Salmon will never, ever get old.

Ingredients
- 1 pound salmon
- 3 green onions, chopped
- 2 chipotles in adobo, chopped
- 1 tablespoon adobo sauce
- 1 tablespoon lemon [or lime] juice
Preparation
- Place a cast iron skillet in the oven while you’re preheating the oven to 400º.
- Top the salmon with all of the remaining ingredients.
- Once the oven is preheated, remove the pan and place the fish in it, skin side down.
- Place in the oven for 10-15 minutes, depending on the size of your fish [mine went to 15].
- Cut into pieces and serve.
