Flourless Brownies
Of all the bowls in my kitchen, I broke one of the only two white ones. It was one of those slo-mo scenarios, too. I had finished working out [do this, I dare you], was shakily standing on my toes to grab the white bowl on the third shelf in the cupboard next to the sink. It slipped out of my hand, but I grabbed it again…only to drop it for reals. It shattered on the counter and sent killer white porcelain shards around the kitchen like confetti. This is what I get for trying to be proactive for some overnight oats.
Since I almost singed my eyelashes off last night [my mascara melted!], I might want to eat out tomorrow. My kitchen is attacking me.
These are crumbly, fyi. I wouldn’t really plan on making them if I had to present them to guests or take them to a potluck. I have no qualms going to town on crumb cleanup in my own house. My brownies. My mess. I dropped chocolate chips in, but you can substitute just about anything in there [nuts, pretzels, peanut butter chips…]. I found them to be better the next day once they had a chance to meld together better. Less messy + more flavor. Done.
Inspiration: Spoonful of Sugar Free
Ingredients
- 1 cup applesauce
- 1/2 cup peanut butter
- 2 eggs
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla
- 1 tablespoons brown rice syrup [or other sweetener]
- Mix ins as you desire–chocolate chips, pretzels, nuts, candy
Preparation
- Preheat oven to 375°.
- Mix everything together except for the cocoa powder and baking powder.
- Add in the cocoa and baking powders and mix until smooth.
- Once you have a thoroughly mixed, thick batter.
- Pour into a prepared 8×8 dish [I lightly oiled mine] and top with whatever mix-ins are available.
- Bake for 15-20 minutes until a toothpick comes out clean.
Mmmm! They look yummy 😀 And ugh! I hate it when I drop dishes, too. Unfortunately, I have a bad habit of dropping clear glasses-the ones I can’t see on the flour!
I guess this is just an excuse to go buy a new one!
These look YUMMY. Like, dangerously yummy. What would you think about adding some espresso powder? Me thinks I might be trying it this weekend… 🙂
I can’t believe I didn’t think to put espresso powder in. I put that stuff in almost everything chocolate! I’d totally add that if I were you!
Ooo, crumbly brownies are so good on top of oatmeal/yogurt/you name it. And how’d you melt your mascara?? Kitchens are dangerous. Good reason to treat yourself to a meal out 😀 I did the Burpees Are Forever and Ever workout yesterday AFTER doing some sumo squats–it was a terrible/awesome idea. The Haters workout is on my to-do list, but getting in an evening jog tonight instead.
I made the garlic garbanzo knots the other night, and I usually wear my glasses, but I had them off for some reason while I went to check on them in the oven. I have a gas oven, so all of the heat is at the top of the thing. When I opened the door, all this insane heat rushed out and I leaned my head down like an idiot to scope things out. I guess I never notice it when I have my glasses on, but my eyes got really hot and really dry and my mascara congealed and curled my eyelashes like none other. The sensation wouldn’t stop until I ran upstairs to wash my face. I can only imagine what would have happened if I didn’t have the mascara on.
I did a jog last night and the bodyrock workout. My legs hurt so bad today. I wanted to fall over when I jumped out of bed this morning.
Ohh, I’ve been hit by the oven blast before too! But never to a mascara-melting degree. They need to put warning labels on those things for us eager bakers. How’d your knots turn out??
They were alright. . I’m having visions of using the other half of the batch as cinnamon sugar twists instead [never mind that it already has some basil in the dough]. I’ve been on a cinnamon sugar kick lately.

Now that Fall temperatures are finally settling in, brownies seem to be lingering in my mind more and more!

Those brownies seem like the best and worst thing all rolled into one, which would explain why I want them.

I made this and wrote about it here. I had some trouble with the brownies being super soggy the next day. What did I do wrong? Was it because I stored them in the fridge?
