Green Chocolate Pudding
Guess who is still on her smoothie kick? It’s too easy. Wake up. Work out. Shower + dressed. Get my blend on. Hair + makeup. Take the dog out. Feed her. Take breakfast on the road.
I realized after this latest iteration that sometimes it would end up really, really thick [it didn’t help that I was letting it hang out in the freezer while I finished getting ready for work]. It made me want to eat it with a spoon. So I did. Who am I to refuse these kinds of desires? At some point I’m going to replenish my chia seed supply. Then it’ll get really thick. Yum.
This is definitely the greenest chocolate pudding you’ll ever see, but I swear it tastes just like the real thing. It’s awesome. Who doesn’t like chocolate pudding for breakfast? The key is having a blender that absolutely destroys any of the vegetables that are hidden inside, and then sweeten to your preferred taste. I’m still using the NuNaturals Pure Liquid Stevia, but you could use regular sugar, honey, maple syrup, agave, etc.
Ingredients
- 1/4 of a large avocado [or 1/2 of a small one]
- 1 small (4-5″) sweet potato, cubed
- 1/2 cup frozen chopped spinach
- 1-1/2 cup milk
- 1 tablespoon cocoa powder
- 10 drops Stevia
- 4-7 ice cubes
Preparation
- Place everything in your blender.
- Blend.
- Rocket science, I know.
Servings – 2 small or 1 large
Yup, that sounds good. Sweet potato in a smoothie? I’m intrigued. And I always end up eating mine with a spoon too, haha–mostly ’cause I throw in a bunch of flax and chia seeds, so it’s all gelled up by the time I get to work and am ready to snack. Gelled up in a good way, because after typing “gelled up,” I realized that may not be the most appetizing description of food.
When I saw gelled up, I thought of Jersey Shore. No shame.
